Out of meryenda?
Try out this quick and easy recipe that you will enjoy doing with your kids :)
Ingredients
1 cup unsweetened cocoa
2 1/2 cups all-purpose flour
2 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3 large eggs
3/4 cup vegetable oil
2 teaspoons vanilla extract
Preheat the oven to 350 degrees F. Line cupcake pans with cupcake liners or use silicone cupcake cups
Mix the cocoa powder and 1 1/2 cups boiling water in a medium bowl until smooth; set aside.
Sift the flour, sugar, baking powder, baking soda and salt 3x.
Add the eggs, vegetable oil and vanilla and beat with a mixer on medium speed or hand mix using a wire whisk until smooth, approximately 1 minute.
Reduce the mixer speed to low; slowly pour in the cocoa mixture until well combined.
Divide the batter between the prepared cupcake liners.
Bake until a toothpick inserted into the middle comes out clean, 30 to 40 minutes.
